Lauren’s Healthy Recipes – Chicken Casserole

Ingredients – 

2 Heck Chicken Italia Sausages

200g Chick Peas

100g Onion Sliced

150g Tinned Tomatoes

150 ml Chicken Stock (or can use alternative flavour stock)

70g Spinach

Sprinkle of Salt

Sprinkle of Pepper 

Sprinkle of Thyme

½ to 1 Clove of Garlic

Method – 

1) In a large frying pan on a medium heat the sausages until brown and cooked (approximately 8 mins), remove the sausages from the pan, chop into chunks and return to the pan.

2) Decrease to a lower heat and add the onions, fry for around 5 minutes, until brown and soft.

3) Add the garlic and thyme and continue to cook for a further 2 minutes.

4) Add the chickpeas, tomatoes, stock, and extra water if needed, season well with salt and pepper and allow to simmer until the sauce becomes thick.

5) Meanwhile add the spinach to a colander and pour over boiling water, allow it to cool, then squeeze out the excess water and stir this into the sauce

6) Once your sauce reaches the desired consistency serve and enjoy!

For extra taste cook the onions and sausages in olive oil and use fresh chicken stock.

Feel free to alter the quantities to suit you or use alternative sausages.
